This award winning raw ‘Pine’ honey from Wild About Honey is a classic, an incredibly smooth unctuous honey. Unlike other Pine honeys which can have a strong malty or even woody taste, this Raw Pine honey is smooth and mild, and fit for every type of use. It comes only in the month of August from Evvia in eastern Greece and is known by beekeepers as “August Pine” . Like all Pine honey, it is a honeydew, much like the award winning raw ‘Serra da Estrela Mountain’ honey from Portugal, or raw ‘Vanilla Fir’ or raw ‘Red Fir’ honey.
Greek Pine honey is also one of the most antibacterial honeys in the world, surpassing Scottish Heather, Chilean Ulmo, Tasmanian Leatherwood and many others. This honeydew is made by bees that forage on the secretions of Marchalina hellenica, an insect which lives on the sap of the Pine tree. It is a particular synergy of the insect and the tree at this time of year that enables this wonderful honey to be made.

Honey and Crystallization Info: Crystallization is a completely natural process and occurs with all raw honey. The speed and size of the crystallization depends on variations in the balance of sugars, ambient temperature and to some extent water content. If your honey is set hard, you can loosen it up by placing it in a pan of hand hot water, (and repeat as necessary) using a spoon placed in hot water first and of course storing it in a sunny/warm place in the house.
