Wild About Honey – ‘Thyme’ Raw Honey

Another Great Taste Award Winner, this 100% raw Wild About Thyme honey is absolutely everything an Algarvian Dark Thyme honey; "Tomilho escuro" should be, smooth, highly floral, medium dark, aromatic and the epitome of the best of Algarvian honey.

The honey is made in a small area of the eastern Algarve not far from the town of Olhao in the hinterland where wild Thymes of many varieties flourish. Thyme is known historically for its antiseptic and medicinal qualities and this Thyme honey is beautifully balanced and is perfect accompaniment to Greek yoghurt.

Wild About Honey - 'Thyme' Raw Honey and Crystallization. Crystallization is a completely natural process and occurs with all raw honey. The speed and size of the crystallization depends on variations in the balance of sugars, ambient temperature and to some extent water content If your honey is set hard, you can loosen it up by placing it in a pan of hand hot water, (and repeat as necessary) using a spoon placed in hot water first and of course storing it in a sunny/warm place in the house.
