Mince Pie Ingredients:
For the Mincemeat:
1 cup organic raisins
1 cup organic currants
1 cup organic sultanas
1 cup organic mixed peel
1 organic apple, peeled, cored, and grated
1/2 cup organic dark brown sugar
1/2 cup organic unsalted butter, melted
Zest and juice of 1 organic orange
Zest and juice of 1 organic lemon
1 teaspoon organic ground cinnamon
1/2 teaspoon organic ground nutmeg
1/4 teaspoon organic allspice
1/4 teaspoon organic ground cloves
1/4 cup organic brandy or rum (optional)
Alternatively you can buy organic mince pie filling pre-made to save preparation time.
For the Pastry:
2 cups organic all-purpose flour
1 cup organic unsalted butter, cold and cubed
1/2 cup organic powdered sugar
1 organic egg, beaten
Mince Pie Instructions:
1. Prepare the Mincemeat:
a. In a large mixing bowl, combine all the mincemeat ingredients.
b. Mix well and cover the bowl with plastic wrap. Allow it to sit in a cool place or the refrigerator for at least 1-2 days to let the flavors meld.
2. Make the Pastry:
a. In a food processor, combine the flour and butter. Pulse until the mixture resembles breadcrumbs.
b. Add the powdered sugar and pulse a few more times.
c. Add the beaten egg and pulse until the dough comes together.
d. Turn the dough out onto a floured surface and knead it briefly until smooth.
e. Wrap the pastry in plastic wrap and chill in the refrigerator for at least 30 minutes.
3. Preheat the Oven:
Preheat your oven to 375°F (190°C).
4. Assemble the Pies:
a. Roll out the pastry on a floured surface to a thickness of about 1/8 inch.
b. Using a round pastry cutter, cut out circles to line a muffin tin for the pie bases.
c. Place a spoonful of the mincemeat into each pastry-lined cup.
