Gluten-Free Oat Cookies Ingredients

  • 150g gluten-free rolled oats (available on Ganesha Wholefoods)
  • 75g Ganesha Organic Dates, pitted and chopped
  • 75g Ganesha Organic Walnuts, chopped
  • 40g almond flour (or any gluten-free flour of your choice)
  • 1 tsp baking powder
  • ½ tsp ground cinnamon
  • ¼ tsp sea salt
  • 80ml coconut oil, melted
  • 60ml maple syrup or honey
  • 1 large egg (or a flax egg for a vegan option)
  • 1 tsp vanilla extract

Gluten-Free Oat Cookies Instructions:

  1. Preheat the oven to 180°C (fan 160°C) and line a baking sheet with parchment paper.
  2. Mix the dry ingredients: In a large mixing bowl, combine the gluten-free oats, almond flour, baking powder, cinnamon, and sea salt.
  3. Prepare the wet ingredients: In a separate bowl, whisk together the melted coconut oil, maple syrup, egg (or flax egg), and vanilla extract until smooth.
  4. Combine wet and dry ingredients: Pour the wet ingredients into the dry mixture and stir until fully combined. The dough should be slightly sticky but thick.
  5. Fold in the dates and walnuts: Add the chopped organic dates and walnuts, mixing them into the dough to distribute evenly.
  6. Form the cookies: Use a spoon or cookie scoop to drop balls of dough onto the prepared baking sheet, leaving about 5cm of space between each. Flatten each cookie slightly with the back of the spoon.
  7. Bake: Place the baking sheet in the oven and bake for 10-12 minutes, or until the edges are golden brown.
  8. Cool: Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
